Monsters retain some of their abilities when polymorphed

Greater flame snakes can still use their breath weapon and flame aura after being transformed into piggies. Not sure about how many other monsters are like this.

It's the interaction with innate abilities. Amusingly, it works the same with players too. Monks can still Ki Blast as animals. Shadow Dancer can summon their shadows. The deadly dynamic duo shadow pigs!.
